The Best Dutch Apple Pie: Perfect for Holiday Baking

Perfect for fall gatherings, holiday tables, or just snuggling up at home with a slice, this Dutch apple pie recipe balances out the tartness and sweetness with fresh, crisp apples and a sweet, buttery oat-crumble topping.
The Best Dutch Apple Pie
Yields 1 9" Pie
Pie Crust
Ingredients:
202g or 1 1/2 Cups All-Purpose Flour
170g or 3/4 Cup Cold Unsalted Butter - Cubed
3g or 1/2 tsp. Salt
8g or 2 tsp. Sugar
60g or 1/4 Cup Ice Water - You may need more or less*
Sweet Steps to Success:
In a large bowl, whisk together the flour, sugar, and salt to combine.
Add the cubed COLD butter, tossing the cubes in the flour to coat. Rub the butter into the flour between your fingers until the butter becomes the size of a pea or slightly larger.
Make a well in the center, and add the cold water a few tablespoons at a time and mix just until the dough comes together.
Form the dough into a disc and wrap in plastic and chill well before rolling, forming, and baking.
Par-Bake the Crust:
Lightly dust a work surface and the pie dough with flour.
Roll out the dough to about 1/8'’ thick, rotate after each roll to ensure the dough is not sticking to the counter.
To transfer the dough to the pan, gently roll it up, wrapping it around the pin, then unroll it onto the pie plate.
Use scissors to trim away the excess dough over the pie pan. Leave about 1/2'’ excess dough around the edge. Tuck this excess dough under itself until it meets with the edge of the pie pan. Press down and crimp around the edge with a fork or your fingers.
Dock the bottom and sides of the pie dough with a fork and chill for at least 30 minutes.
Using a piece of parchment paper, crumple up the paper and place on top of the chilled dough. Fill with pie weights, rice or beans to the top of the crust.
Bake in a 350F oven until the edges begin to lightly brown, 10-12 minutes.
Remove the parchment paper and pie weights, and return to the oven for another 10-12 minutes more. Cool completely before filling and baking desired pie
Oat Crumble Topping
Ingredients:
226g or 1 Cup Unsalted Butter - Melted
150g or 1 1/2 Cups Old Fashioned Oats
236g or 1 3/4 Cups All Purpose Flour
5g or 2 tsp. Cinnamon
Pinch of Salt
200g or 1 Cup Brown Sugar
Sweet Steps to Success:
In a large bowl, whisk together the oats, flour, cinnamon, salt, and brown sugar.
Using a fork, mix in the melted butter until large crumbles form. Do not over mix.
Crumble over top of your dessert and bake.
Pie Filling
Ingredients:
9 Large Apples - Granny-smith, Gala, Honey-crisp
28g or 1/4 Cup Corn Starch
113g or 1/3 Cup Maple Syrup
67g or 1/3 Cup Brown Sugar
12g or 2 tsp. Vanilla
12g or 2 tsp. Apple Cider Vinegar (optional)
7.5g or 1 Tb. Cinnamon
Pinch of Nutmeg
3g or 1/2 tsp. Salt
Zest of 1 lemon
Zest of half an Orange
Sweet Steps to Success:
In a small bowl, whisk together the brown sugar, lemon zest, orange zest, corn starch, salt, cinnamon and nutmeg.
Peel, core and slice your apples and place in a large bowl.
Pour the sugar mixture over the apples and mix until all of the apples are coated.
Add the maple syrup, vanilla and apple cider vinegar and mix to coat all of the apples.
Set aside for 5-10 minutes to allow the juices to come out of the apples.
In a medium size saucepan over medium heat, while continuously mixing, add the apple mixture and cook until all of the liquid starts to thicken and apples start to slightly soften. The liquid should start to thicken enough to be able to coat the apples.
Remove from the heat.
Pie Assemply for Baking
Sweet Steps to Success:
Take your par-baked pie crust and fill with your cooked apple mixture. Making sure to press down on the apple mixture to fill all of it. Even if it seems to mound above the pie crust as the apples will shrink during baking.

Next, spread the crumble topping on top of the apple mixture.

Place the pie onto a sheet tray and bake at 350F for 45-55 minutes.
If the edges of the crust or crumble start to darken too much before the time is up, place a piece of foil on top of the pie.
Remove from the oven and allow to cool completely before slicing!
